Intel Core 2 Duo processors are new, whereas Pentium M are not...plenty of laptops today (including new MacBooks) use the Core 2 Duo processors, so they are patently the processor to go for.
Beware however: in this day and age the amount of RAM (memory) and Hard Disk storage you have is more prominent than processor speed.

Pentium M is not a fast processor and it a consume pieces of technology because there are Pentium 4 M contained by the market. M processor are biddable if you are on a road or traveling which make recharge your laptop a hassle.
Intel core dual processor is best for laptops
Duel core or core 2 is better overall in behaviour but has two chief drawbacks compared to M which are higher power consumption and more expensive. The major questions I meditate are what is your budget? And what do you use your laptop for? If you budget fits and you do not need adjectives that additional processing power, vote you use it for internet and emails, and for less process hungry applications close to Word or Excel then an M will a longer freestyle life might form it more portable and possibly lighter as batteries are large. If you are going to play graphics intensive games then duel core it.
